Does anybody have a suggestion for a brine on our first attempt at smoking a turkey? Also, how long do you smoke/cook?

Here's a good one.  I tried this recipe on Thanksgiving and the crowd was pleased.  Two bird, and this was the one that was decimated:

My favorite to date was the easiest.  I took a large pot, filled about halfway with water, dumped half a bag or so of Morton Tender Quick in and dissolved it, put the 10ish pound turkey in, added more water to completely submerge the bird, and let it be overnight.  Next day I took it out of the pot and put it on a rack to air dry, preheated my smoker for an hour or so, then smoked the bird at 250, using 4 hours of Pecan, then it took another hour to get to my desired IT.

It was AWESOME.
