Turbinado Sugar

Today I was in a health store. While there I thought I would ask someone is there a difference between Turbinado and Raw sugar. The first person I ask did not know, so he asked one of the more experience staff at the store. She was unsure either, but was curious herself, and asked an even more experienced person.

This is what he told me. Though Turbinado and Raw sugar look similar, they are not the same, and they are processed differently. Turbinado has larger crystals and is darker. He went on to state that Turbinado sugar is processed to remove more impurities (he could not explain what the impurities were). It is called Turbinado because of the way it is processed. It is processed in big bins that spin - similar to turbine engines, thus the name.

I then told him that this sugar is widely used in BBQ and Smoking, because it is less likey to burn than other sugars. He never knew about this. I guess we both learned something on this day.

I was always under the impression that Turbinado sugar was raw, unprocessed sugarcane. I didn't realize there were seperate products available.

As my understanding goes, Turbinado is darker because it has not had the molasses part removed, therefore truly raw.

Hopefully someone else will chime in to let us know if I'm mistaken or your granola-boy was just trying to impress you.[:)]

You had me doubting this poor man; [:D][:D] so I decided to do another search on the web and found this site http://www.hainpurefoods.com/products/category.php?cat_name=sugars . He was right. Score one for the granola-boy [;)]. I now recall he did state they used water in the process.
