I have the digital and have no problems with it mantaining the preset heat. I have a two probe themometer that measures the oven and food heat and it always stays within one or two degrees of the reading of the digital readout. The oven stays within two degrees of the range I preset. I did not have such luck with the 6 rack but the 4 rack has no problem. The only problem I have is having all that food stacking up in the fridge because we can't eat it fast enough. You see I feel the need to use it every night and all weekend because it is so much fun. You will find it is like crack, once you start this hobby you can't quit, you will always be looking for something to smoke.
