Ribs

In most cases I find that I have to cut them to make them fit the racks.  I have stainless steel bacon hangers that I use when I make belly bacon.  I have been intending to try hanging some ribs from the bacon hangers.  I think you could get them in there without cutting them as they would be hanging vertically.

I have thought about the bacon hangers as well but then remember that the indication of when they are done is when they fall off the hanger.   ;D  ;D  ;D

I always cut the ribs in half.  I now just tell the butcher to halve them and skin them for me.  The size is perfeect for the family.  Adults get a half each and the kid gets some of his half.  Soon he will be eating his entire half.  Then I will need to get an extra half when we want just a rib or two more.

I can get two racks with room per rack that way.

I cut them so they just fit, not half, more like 80%, then I have a "ends" rack"

I lay the ribs on the rack, back up a bone and cut.

I mainly will do spare ribs. I do about the same as FLBentRider, I just remove the last 3 ribs off the small end and they fit perfectly. The smaller pieces are place on another rack. When serving I cut the ribs into individual parts.

If I am only going to do two racks of ribs, I coil them so they will stand vertically, and you can place two full racks on one tray. It save on cleanup.

Good point on the fall off the hangar tender!! :D :D :D  I wouldn't have that problem as mine would go from the smoking period on the hangars to wrapped in foil and fiinish in the house oven.  I seem to have better luck finishing ribs and butts in the oven.  Better heat control.  Still having a hard time convincing my wife that I have to watch the oven with a beer in hand just like I do with the smoker! ;)

I just finished attempting to remove the membrane from the ribs. That was about a joke. I ended up just getting pissed and scoring the meat all over to allow the spices through.

Anyways, they are rubbed down and wrapped in the fridge now. I will post pictures tomorrow after they are all done

Rib membranes are like girlfriends when you were growing up.......some are harder to get rid of than others  ;D

I always use the butter knife and have good results....also, you may want to check but some places will remove the membrane and you can spens 30 minutes just trying to find the dern thing without it even being there.

I was having a hard time getting a decent grip on that slippery membrane once I had separated it from the slab.  There is a surgical tool called a "hemostat" that is basically a scissors type instrument but has a gripping tweaser-like end instead of a blade.  They are a few dollars at any surgical supply store or even online.  Very helpful.
