1st try at Summer Sausage with Jalapeno Chedder

Finally got to try a fermented warm/hot smoked recipe  I found in the book  "The Art of Making Fermented Sausages "    http://www.wedlinydomowe.com/sausage-recipes/summer.htm

Here are the stuffed sausages ready to ferment
All hung up in my improvised fermenting box 
Here is my fermenting setup I got a humidity control which I plugged a small humidifier into, did some tests before I did the sausage it seems to work OK so far, but in the meantime I had some brain farts and found this tiny humidifier and control all in one http://www.bargainhumidors.com/bh/ProductInfo.aspx?productid=ACC-HYDRA Oh well, I'll see how my setup works first. I'll post results in a few days

Just an update 
This is after the 24 hr fermenting period

This is after smoke/cook

This is in the makeshift cooler

I think I'm gonna cut one open tomorrow
