1st Attempt at Ground Moose Jerky

Just finished my first batch of Moose jerky using one of the Hi-Mountain mix's, pretty happy with the result.
Only real issue is I think I had the smoke going too long, slightly over smoky taste, but otherwise very tender and tasty.

I am now hooked, just found a whole chicken in the freezer, next weeks experiment  :)

Whats the best way to post the photo's?

Let me know how you do poultry.  The recipe that came with my dehydrator said to cook it after drying it out to kill the bacteria.  Of course this wasn't using the smoker and I want to use my smoker.

Looking good there andy.

I noticed you have doubled up on your racks so the ground moose don't fall through the larger original racks. There is a better solution here at this link. http://www.yardandpool.com/High-Temperature-Jerky-Drying-Screen-p1900.html

Also a trick here. If you invert one rack on top of the other you can double the amount of jerky. So if you have a 4 rack, turn it into an 8 rack, If you have a 6 rack turn it into a 12 rack  ;D

Looks so great! Did you use a jerky gun or something to form the ground jerky strips? How's you make the snack sticks?

I used a jerky gun from Hi-Mountain. It comes with two nozzles for strips and snack sticks.
I need to practice more doing the sticks.

Looks Good Andy.
If your going to make snack sticks look under the thread about stuffers. You will never get the enjoyment of making your own snack stixs or sausage if you have to reload that greasegun 20 or 30 times.
