First cheese smoke

Sunday did my first cheese smoke. Six pounds 2 pepper jack 2 coby 1 cobyjack 1 mild chedder. Six hours apple and maple. Wraped in plastic. monday night they went into the foodsaver. Know t6he two week wait. had to try a sample monday night. Every body was right tasted like a ashtray. Next time will listen to everybody.

Hard to not try a sample....try and be patient you will be rewarded!  I've got some pepper jack thats been in the fridge for over a month.....the longer the better!
