Pickled ham and tasso

I cut up some ham and tasso, one pound each and put in a jar:

Mrs made a pickling solution and once it cooled we poured it over the meat:

We will let it sit for three days, and then we will try it.

Here is the pickle brine, which we got from www.gumbopages.com:
1 quart distilled white vinegar
1/2 C mustard seed
1 T celery seed
2 T Tabasco sauce
1 bay leaf
6 cloves garlic, peeled & cracked, but not crushed
1 T Kosher salt
12 peppercorns

Bring to a boil and let boil for three minutes.  Cool and add to ham.

We will let you know how it turns out!

Pickled Tasso, Wow, what a great idea! It's just not for gumbo anymore. I will try that for sure.

Okay seemore's, I'm waiting for the final review. I'm going to have some leftover ham after making the balls and have some tasso in the freezer. Anticipation!!! ;) :D :D :D

HCT, we tried it tonight after we read your post!  You might want to make more of the pickling solution, since it did not completely cover the meat in the jar.
It was very good.  You know how "pungent" vinegars can make things?  I love that with pickled foods!
Of course, Scott wants to use just tasso next time and leave the ham out.  I like the ham - especially since I am hooked on Amish pickled ham.
However, it did appear that the tasso was a little less spicy in the pickling solution.  It did not take away from the flavor of the tasso, rather, it seemed to enhance it!
Please let us know what you think of it after you have made it.

Thanks seemore, I will be making this in the next week. By the sound of your review I guess I'll have to be making more tasso. I'm glad I have a load of hog in the freezer. :D

I wanted to pickle some but i think we used all the Tasso for sumpn else  ;D

Only smoke a ceegar when i am in great outdoors, never in the house.


A tasso made like a ceegar?   I could eat while walking, but i would need some crackers and cheese or some gumbo.  :D  :D  :D

   The pickled meats came out great. I doubled up on the pickling solution, lots of mustard seed. :o :D
