Going to try a little salmon today. Was in the brine for 12 hrs, going to use the Bradley method of smoke using cherry wood. It's no monstor load like a lot of you guys make, just 4.5 lbs from Cosco.

Looks great Bear. I've always used Alder for my smoked salmon. Will be watching with interest to see how it comes out with the Cherry.
I did mine with maple and it was really good...

I did some this weekend with 2 hr Apple, mmmm mm mmmm.
That there pile of salmon you got going there is lookin good allready.
I've always used Alder but have now switched to Maple. Just a little bit sweeter, I think, and it goes great with the teriyaki and garlic from the brine...

After 7.5 hrs it is very tasty. I ended up using maple, I coulden't find my cherry (lets keep the smart comments to a minimum please ;D)

And your can only use cherry the first time you season your smoker ::)

Bear that is some killer lookin salmon, I guess you vacuum packed them and put them in the freezer..?
