This smoke was a lot of fun to do.
Seems like I was always doing something with the different
products as they came out of the smoker at different times.
The split chickens got two different rubs.
The sirloin roast got magic or steak dust and black pepper.
The ribs were done without foiling, just a spritz of apple juice and evoo every 30 minutes.
The ribs were a little sweet, but were very moist.

They get rubbed down with maple extract and vac seal for 3 to 4 days and then sliced for sammies or larger slices for breakfast or supper.
Vac sealing it does the same thing it does to cheese. It drives the smoke deeper into the ham.
How long did all of this take? Do you do this much often? Have only done 2 racks so far of half chickens. Just a wimp compared to your achievements.

If I tried that much food, I'd be throwing most of it out. No way I could eat that before it goes bad. That'd be such a waste cause that looks awesome!
2 Chicken halves got vac-packed and Son#1 got them.
Ribs got demolished, they were gone by lunch time the next day.
The Hams are still vac and gonna get sliced in day or so.
Sausage is history. What we didn't eat went on pizzas.
The Sirloin Roast was given to some people that needed it worst than I did.
No waste, all is accounted for.

We landed in Houston from Mazatlan around 4:45. Had to go through customs/immigration, then leave the secured area and ride the little train... Then back through security. By this time, we had about 90 minutes to eat and make our connecting flight to St Louis.
I had some of "Harlan's BBQ" in the food court. It was Ok. (they had a CookShack sitting in there puffing away)
"Sonny's BBQ" would blow them out of the water...
