Title: Smoked Pnuts
Post by: NePaSmoKer on May 03, 2009, 09:39:00 AM
I did these before and turned out great. I am using planters dry roasted pnuts. Put them on a slip of wax paper, pour some country bobs on em and mix em up. Place on Bradley rack with the screen and pop in smoker with just the smoke gen for heat and 1-2 pucks of your choice. I am using 1 maple puck on this 1.5 cups of pnuts. I think i might put in dehydrator for about 30 mins after the smoke.

You can use whatever kind of bbq sauce you like.

I was thinking the same thing.  I seem to have a few pine nuts in the cupboard.  Guess it probably wouldn't work on the raisins though ;D

I did do the peanuts with some iceman sauce and they were good!

Sounds like a waste of pine nuts.  I'd get me some garlic, basil, EVOO, parmeasan, pasta and make me some pesto!  Serve that with some fresh sliced ripe tomatoes - I'm in heaven!!!!

Did 3 pounds of those smoke peanuts today.  Half was in BBQ sauce.  The other half was in Texas Pete hot sauce combined with Cajun Power Garlic Pepper Sauce.  Both dusted with Jan's Dry Rub.  1 hour cold smoked with cherry and maple.  OMG!  They are insane good.  Shared them with friends.  Have an order for 3 pounds of the "cajun" style for next weekend.

Thanks NePaS! You ARE the smoker Jedi.

Sorry I did not get any "after" pics as all of it was consumed rather quickly. The winner were the ones in wing sauce with Parmesan. Not spicy after smoking and dehydrating, might have to do some heat powder next time to jazz it a bit. That was my first run with the Cabela 80l. Nice equipment, but a noisy little devil! Gotta find a home for it in the garage! ;D

Do you think these would work without a dehydrator?  Maybe just leave them in for an extra 30 minutes at a certain temp?

I really gotta start saving my pennies for an 80L.

In the oven at lowest temp with the door open a bit should do it. My Cabela's came from change I throw into a can every day. It mounts up when you put a couple extra dollars in now and then. Quite painless!

I will try the oven trick this weekend.  I am going to have to start the Cabelas fund tonight, good idea.  I just gotta find a jar with a smaller opening than a small hand or 10 small hands.  Maybe I should start charging my kids a nickel for every piece of jerky, let me see I should have my 80L by about Sunday, this week. ;D
