This in my moms recipe. We ate this allot when i was a kid.

1 dried ancho chili (or any other dried red chili)
1 pound fresh lean ground pork (can be store bought w/out salt/pepper)
1/4 cup water
3 cloves of garlic minced, chopped fine
1/2 t hot red chili powder or cayenne
1/4 t salt
1/2 T paprika
2 T Tequila (or sub tequila for 2T red wine vinegar)
1 t mexican oregano
1 t ground cumin (smoked cumin is good too)

Soak red chili in boiling water for 5-10 mins. Drain, place chili in blender and grind. Add to ground pork with remaining ingredients mix well and refrigerate from 1 hour to overnight. Make into patties or use like chorizo with scrambled egg  and cheese burritos.

I've been told that drinking tequila for breakfast is one of the many indications that I'm still a kid.

Nepas,

I think your roots may be traced back to Texas at one time or another.  That is a great looking recipe. Ancho chile is my favorite dried chile.  Ancho and tequila; that blend has got to be illegal in several states. It is always nice to continue a family tradition or in your case, create many others.

Good luck and thanks for sharing your library of knowledge,

Pachanga
