Title: Oh what the heck..brisket!

Could'nt make it to Nepas for the smokeout, so might as well do some brisket....3 average about 9 lbs

Hit with 4 hours of mesquite, pulled and into the oven overnight, then FTC for a few hours.
All sliced up for the better half to take to work

This one is mine, got a batch of wts pintos and wts tater salad to go with it....The third one went to our college kid that uses our roping arena!

Always!!   ;D  Although must say the one I sliced for my wifes work was like cutting through butter, started to keep that one, but like spreading the joy!   ;)

Plated up tonight for dinner....lost a bit of the pink from the brisket reheating, but still tender and fell apart!.....YYyyyuuummmm!

They do doggie drives in Tennessee?  What breeds and how do you keep them in a herd and stop them from sniffing each other all the time instead of plodding along to market?  I think that may qualify you for a brisket of Fido but not one of "love."

Not as many as in some other states.  We learned long ago, that if you ain't the lead dog, the scenery doesn't change much!

Looks great!! 2 quick questions what temp did you use for the oven (I assume about 220 degrees) and about how long in the oven?  I understand low and slow but the time varies on weight (but if I shoot for an IT of 200 degrees, I should be good??)

I am prepping for doing more brisket this weekend!

Temp wise 200-220, I think I ran those for right around 16 hours.  And yes your IT of 200 will be fine, just don't forget to FTC for at least 3 hours!  Good luck, can't wait to here to outcome!

I use the willys one-derful from the S&S book!

3/4 cup paprika
1/4 cup coarse black pepper
1/4 cup coarse salt
1/4 cup sugar
2 Tbsp chilli powder
2 Tbsp garlic powder
2 Tbsp onion powder
2 tsp cayenne
