Title: Pork Roasts

My neighbor came over and said hey the school is throwing these away. WOWSERS I scored 300lbs of frozen prok roasts. All cryovac sealed. These 5 are going to be done for a party for my 2 yr old grandaughter on the 20th. I think 59lbs should feed 67 people  ;D

300lbs is what i got. The total they were tossing was 1000lbs. It was a couple months out of date and the new supplier they are using will not sell to them if they have stored, out of date food. So the 1000lbs got split up between my neighbor and 2 other workers.

Time to make some Sausage!!!!! When you building the Walk-in? Damn your not allowed any new toys. But it really wouldn't be a new toy if you put a couple bags of frozen corn in there out of the kitchen fridge!!!

I just picked up 20 lbs of Tender Quick... for free too! I don't use it a lot, except for curing but what the heck, the price was right!  :D

I'm familiar with that saying however no one has EVER gave me any pork let alone 300# of it!  :)

Well i did 3 of the pork roasts. Here are the results and some Pros/Cons

Pros

They were free  ;D
Half of the roast was nice and juicy tender when shredding
The net came right off. I was worried they would burn or melt.
They didnt take long to cook/smoke
The Carlonia Treet injection worked great

Cons
No bone which made some of the meat kinda dry
Not as much fat to render down through the meat.


These would do great to smoke for a few hours then into the crock pot.

The UDS stayed between 225 and 250*

It does look a little dry but some good BBQ sauce would make me happy, you want my address?

Congrats on the 300 lbs of pork.  I know it's all in roast but that's about a pig and half if it was hanging weight! Youzzers is right!

No didnt use a water pan on these. Next time yes i will use one.  These i did were for a couple guys who work with my neighbor, they will eat anything out of their norm  :D

I had three roosters that needed to be "utilized" yesterday.
I laid them on the counter after I plucked them and saw a photo op I couldn't pass up!
Because we hatch our own chickens for egg layers we do get extra roosters that we can use for meat which dress out around 3lbs.
I do have three big meat chickens that I'm trying to raise to roaster weight.
So there...my friend!

When i was growing up my dad showed me how to hipnotize a chicken then lop its head off. I was laughing so hard when he showed me that but it works.

I've had a few friends tell me about hypnotizing chickens and I had one try to show me how but they couldn't get the chicken to do it.
How did your dad do it? This friend was holding the chicken over a line in our concrete driveway and making the chicken stare at it. Then rocking the chicken back and forth along the line. LOL  :D :D

Put the chicken in the dirt make sure his neck is sticking out straight and the beak is down on the dirt. Make a line in the dirt with your finger from the beak out about 6", keep going over the line and slowly release the chicken. it will just stare at the line you made then LOP  ;D

Oh, so it does involve a line...my friend had the right idea then.

We had a 1x6 about a foot long with notches cut on the end to slide the feet in. Would hang 5 at a time on an old swing set. That way the meat wouldn't get bruised up when they was floppin around.

Yeah 10.5, that's what I do, hang them upside down on the horizontal  beam at the entrance of the chicken yard.
I do three at a time, that seems to be my limit.
When I processed my first birds, I read around online and it seems that most county extension sites recommend hanging them by their feet and nicking them on the neck.
It's pretty humane, they bleed out completely and do not get bruised or dirty.
I know a lot of folks that raise meat birds pay someone else about a $1 a bird to process them and it really adds up to the cost of the meat in the end.
Now with my beef I do pay some one to do that!
But I still usually come in at under $2 a pound total so I figure it's well worth it.

The remaining roosters are always remarkably quiet the day after slaughter day!
