Title: BBQ pie

Had some leftover pulled pork and a couple of beers so i started searching for something to do.
got a frozen pie crust and added 2 cups pulled and chopped pork

then chopped 1/2 cup onion, seasoned it with cavanders greek seasoning and sauteed them.

added 1/2 cup black beans drained and rinsed. (sorry i forgot to take a pic)
then found a 7.5 oz. martha white yellow corn muffin mix.
after mixing the muffin mix i added 2 Tablespoons of sticky fingers carolina classic BBQ sauce to the mix.
topped the pie.

baked at 400 degrees for 25 minutes.

let it cool enough to handle then cut a piece for samplin.
with a little side of sweet slaw and drizzled with more sticky fingers
served upside down is best, that way the smoke hits first then the sweet of the muffin mix.

next time i will add some jalapenos to the muffin mix and a little more meat.
other than that the flavor was great!

Thats a beauty there UIS, change up a couple of the ingredients and that would be a heck of an entry for the BIC!

West Texas Shepherd's Ham Pie with Pizza DOH Crust!

Wouldn't that put a hitch in UIS's gitalong (or crack'a'lack, as the case may be)?

Way to go UIS thinking outside the box!! Don't yeah just love what a couple of beers, some time on your hands, and hunger pains come up with.

My wife would probably say that "Beer is the recipe fodder for something that could never be recreated"........Guilty as charged! ;D :D

That looks fantastic!  Nice plating with the slaw, too.  Add an ice cold beer, and you are SET!
