Title: Getting Creative with Venison

OK Guys and Girls, so the story goes, our good mate Ashley rang one day and said, hey finally knocked one over  ;) and sending it up
Well to Karl and My surprise up turn a chillybin of 30kg Venision
I must add it this point Karl and Me were drowling at the mouth  ;D

So the plan was set, we are going to make a feast out of this and do what no man has done before  ::)

One the list was of course the Famous Jerky, Pastrami, Salami and Beer Sticks

Saturday arvo was huge and this is how it all evolved:

Karl turns up, first order beer in one hand :)

Cured down Pastrami and jerky for 5 days before and them the segments unfolded

First off was the tasting of the jerky  ;D

and then there was hey Karl what do yo think of the pastrami!

Total silence as one enjoyed his moment in heaven :)

Then came the mission of salami's 30kg to be precise buy the time the ingredients were included

Right Phats get to work  ;)

Out with the trusty salami stuffer

and 2 hours later we ended up with this

Right stage to, leave in fridge overnight and fire up Bradleys the next morning

At this point the smell was oozing through the neighbour hood and neighbors were asking what was for lunch  ;)

And even the cat was enjoying it  ;D

and then the phone call came, keen on a scallop mission, hell yeah so bradleys were set and off we went :)

5 Hours later we got back and decided it was time for a afternoon feast over a few beers

So there you have it all compiled in a few hours and Ashley your a legend to say the least, From Me and Karl big smiles here

Everything looks good. What cut of meat did you use for the pastrami?

Hey Habanero, we ended up using the back steaks, best part i know, but the finished result was the best ;D

Hi carolyn, this one was a red deer, mainly we have alot of sika's down these part of the woods
PS can't bet venision ;D

PS can't bet venision ;D
It's so funny, today we ended up watching a hunting show and they were hunting red deer and sikas in NZ.
I have to say it again, great job on all that venison!

That pastrami is off the hook ! I showed my son and he said we gotta do that this year. Told him to get started and I'd help. Great job.

Nice color in your pastrami, I have made pastrami out of deer and it turned out awesome

I must say, that pastrami was so moist, and really tasted as good as it looks.
