Cooled off this weekend with no humidity so I said to my self

Now comes the waiting game, just put in the bottom of the fridge behind every thing helps keep me from dipping in to soon.
It all looks great OU! Only one thing missing, a second shot glass of JD for me. Might need a few of those while waiting for the cheese to mellow. :D
Looks great, but I think I still could have picked out the swiss and pepper jack even after a couple JD's. :)

Hey has anyone tried dipping the cheese in wax as opposed to wrapping it? And I wonder what kind of wax you would use?
I would recommend the JD anything wrap.

HEHEHE. That would be great if I was trying to get drunk, but I mean instead of plastic wrap after you smoked it. Like the swiss do with their cheese. I don't think you could use just paraffin wax as it is a petroleum wax. Mind you my mom use to use it on jams and stuff.

I have not tried the wax but I would think it would be more work than the bags

I apologize for getting back OT. ;) I did my cheese on 18Sep and took the sharp white cheddar block out of the fridge this afternoon. We had some company so I figured I'd give it a try. Fabulous. It had 2 hours of apple on it. The extra sharp cheddar and J. Jack is still waiting. Next time, I'll do about 6 or 8 blocks of cheese. Nice to bring one along when visiting or just relaxing and dipping it in your Maker's Mark. Oops, here I go OT again. ;D
I did mine the 20th and when I got home this sun I almost broke into it but when I was getting a knife out a friend stopped by and we hung out in the man room and I forgot all about the cheese, although it would have gone nice with the JD. Wow that was close :D
