My boss asked me last week if I would do some smoking for a party she's having this weekend...No problem!   ;D  Getting the briskets started, 30 lbs. all trimmed up and ready for a rub down.

After last night in the fridge, resting while the smoker comes up to temp

Chicken, ABT's and sausage on tap for friday!  We'll check on the briskets here in a bit!

That looks really good WTS.  Maybe you can pay for your smoker(s), unless of course it's all volunteer.  I figured that if I went into the business, I'd only lose about $5 per hour.  So, Let's get to the Sham-Wows.  ;D ;D

Briskets out of the smoker....went 8 hours, got kinda sidetracked with my granddaughter!!  Time for some low and slow cooking!

3/4 cup paprika
1/4 cup coarse black pepper
1/4 cup kosher salt
1/4 cup sugar
2 tbls chili powder
2 tbls garlic powder
2 tbls onion powder
2 tsp cayenne (I use 1 tbls)

I was going to start a new post but since WTS is on here I was wondering what does FTC stand for ?? And those look great ! Looking forward to doing my first here this weekend..

FTC is Foil Towel Cooler.

A resting / staging method that will keep the food warm for a while, up to six hours.

After 12 hours @ 200, just about ready to FTC for a bit then time to deliver!

Party is this evening, briskets were whole and triple wrapped in foil to be reheated today!  I don't like to slice then re-heat seems to dry out to easily!

So what all went on the menu that you provided?   LOTS of brisket, 40-something ABTs and how many 1/2 chickens?

About how many people were you cooking for?
