My boss asked me last week if I would do some smoking for a party she's having this weekend...No problem! ;D Getting the briskets started, 30 lbs. all trimmed up and ready for a rub down.

That looks really good WTS. Maybe you can pay for your smoker(s), unless of course it's all volunteer. I figured that if I went into the business, I'd only lose about $5 per hour. So, Let's get to the Sham-Wows. ;D ;D
Briskets out of the smoker....went 8 hours, got kinda sidetracked with my granddaughter!! Time for some low and slow cooking!

FTC is Foil Towel Cooler.
A resting / staging method that will keep the food warm for a while, up to six hours.
After 12 hours @ 200, just about ready to FTC for a bit then time to deliver!

Party is this evening, briskets were whole and triple wrapped in foil to be reheated today! I don't like to slice then re-heat seems to dry out to easily!
