The conversation started with "when are we going to smoke that brisket?" And ended with "what are we going to eat tailgating at the Dolphins game?"
We put the two together. I am going to put the brisket in this afternoon, pull it out tomorrow ~1100 and FTC it on the way to the game.

The temps were not where I wanted them when I took it out of the smoker....

But - you gotta eat - no plan B - so into FTC it went.
Drove to the stadium - pulled it out of FTC.
Nice... tender....

It's a D70 DSLR. Bought it new, it is about wore out. Looking at the D90
FLBR that looks sooo good and I am impressed with the crust.
I love crusts and it looks like you taking off and if so could you tell me why?

I didn't trim the fat cap before it went in the smoker, that section was a little thick for us.
Plus I received a hint on the direction of the grain...
