Smudge has more to do with wood burning smokers, the smudge is a heavy smoke right from the beginning. Looks like an old locomotive puffing out smoke

Good for you John. The way it was discribed in that link you would have to buy a chrystal ball to know when the meat would be done.

Smudging is a heavy smoke from the start lasting around 3 to 4 hours. To me its way to smokey but some like that. Some of the big sausage makers here in PA use heavy smoke with wet wood that causes steam with the smoke. This causes the smoke to adhear fast to the casings.
