Title: Thanksgiving plans
Post by: FLBentRider on November 22, 2009, 10:17:42 AM
My apologies to our Canadian members...

What are you doing for (American) Thanksgiving ?

Smoking the bird? Traveling ?

Us ? We're loading up the Motorhome and heading to my brothers home in Charlotte, NC

Yep, we're gonna park in his driveway, put Christmas lights on the RV.. "National Lampoon" style!

I'm going to smoke the Turkey in the BPS. We'll have a small turkey or a breast in the oven for the gravy thing.

I'm going to attempt to make smokey gravy, but I'm not going to give it much hope.

We are staying home.  We will have about 10 people for dinner , 7 will be here Wed -Friday or Sat, so I have a few meals to cook ;D

I'm not smoking my turkey (ducking to avoid flying objects :D) but will brine and then put an herb paste under the skin.

I'll do a non-smoked recipe post later I'm prepping a bunch of things today :)  White rolls, Pecan/Cranberry Wheat rolls & Pumpkin Swirl Cheesecake.   Also spaghetti sauce for lasagna for Wed night.

The last couple weeks I have made and frozen stock for gravy & stuffing,  stuffing bread and cornbread.  Made cran-apple sauce & cran-blueberry sauce.

The next couple days will be chocolate cream pie & a huge apple crisp.  Then the rest on Thursday.

We're staying home.  Everyone seems to come here - can you still call daughters in their 30's kids?

I'm practicing on a top round roast today.  Cold smoke and then into the Big Easy.

Technical note.  I'm doing the bisquettes by hand.  They seem to take 30-35 minutes with no cabinet heat.  I use the stove timer.  50/50 Oak and Mesquite, four pucks.

I'm going out tomorrow to get a fresh bird in the 14-16 pound range.  I'll brine it overnight and then go pretty much the same route as the RB if the RB works out.

My daughter brought over her old artificial pre-lit tree and assembled it for us.  Charlie Brown style.  But, it saves a few bucks and a lot of needles on the floor.

Hope you enjoy your TG FL!

Having already cooked three turkeys in the last couple of weeks (one kalua, one "fried" in TBE, and one smoked and finished in TBE), SWMBO and I are opting to get out of town.  We're flying to San Francisco on Wednesday and will have Thanksgiving dinner at the Marine Memorial Club (great turkey, champagne included, and in the same place we're staying which makes napping easy before Happy Hour).  SWMBO's daughter and a friend plus some old friends of ours from Oregon are coming on on Friday so it looks like a weekend at the Ferry Building, North Beach, Chinatown, and Tadich Grill (assuming I don't freeze to death between venues).

Hope you enjoy your TG FL!

Thanks!

We're leaving Tuesday after school gets out, we'll wally-dock somehere down the road when we get tired. Finish the drive on Wednesday.

I've sent the brine recipe ahead and they will purchase a fresh bird on Tuesday-Wednesday. It will go into the brine Wednesday night.

Smoke in the BPS Thursday.

Its always a little nutty when our two families get together. We will have 6 kids - 17,16,6,5,4,3 underfoot.

I'm trying to get all of my "stuff" together that I need - bisquettes, ET-73, bubba pucks...

Well, I usually get invited to a friends or my sisters house, but nothing yet. I went ahead and bought a turkey and will try to smoke it this year. Hadn't done one yet so I've got my fingers crossed.

Happy Thanksgiving All!!!

We're staying close to home...   Got a sick critter.

Smoking another 10 pound turkzilla for Thanksgiving.   I might actually start it midnight before, so it'll be done in the AM for some FTC time while we fix the side dishes.

I'm working the day after Thanksgiving.  :P  Almost out of vacation time for the year, so I need to get some hours in for the time off around Christmas.

Kevin - give a shout if you need help!  I'll be around and online.

Having Thanksgiving at my sister's house with other relatives. I'm not smoking anything this year. I got my ham in the cure late, and ti won't be fully cured until Tuesday, which doesn't leave much time for to smoke and cook it. I'll smoke it on Friday and freeze it for either Christmas or New Years.

Gonna be 40* on Thursday with rain mixed with snow...   Good day to hang out inside w/ all the food!
I'm definitely starting my big bird Wednesday around midnight.

Mrs and MIL are fixing those nasty sweet potato thingies, so I think I'll do up some of Hab's Syracuse Salt Potatoes (http://forum.bradleysmoker.com/index.php?topic=7350.msg83010#msg83010) for Squirt and myself..

You have to eat carbs on Thanksgiving,  it just wouldn't be right if you didn't.   I made three kinds of bread/rolls ;D

SoDaks are going to NoDak for family dinner.  Put store purchased 14 pounder (along with a couple boneless t-breasts) in one bucket.  Put a wild bird (about 10 pounds) in the other bucket.  Both have the same Rytek brine going.  Will take 'em out Wednesday morning and put in the 130-140 smoker for a few hours.  Finish in oven.  Travel Thursday.

I got a couple cans of Pillbury rolls.  That's the extent of my baking abilities.

Speaking of carbs...

Good luck and hope the hunt is good and the time spent w/ the 8 year old is better.

I let a 9 yr old sit with me on my sat afternoon hunt, what a trip.
He's already shot a doe during rifle season and a doe with his bow this year.
Very sharp little kid, and of course he had to drive the 4 wheeler.

FLBR,
Before you left on your trip you mentioned National Lampoons Christmas Vacation and parking the RV in the driveway.  Because of that, all I can see is you standing in the driveway with a cigar in your mouth, beer in one hand, waste hose in the other hand and saying "$hitter'$ full!".  :D :D

All seriousness, your RV looks great.  I know you guys had a great time and that BPS looks like it kicked butt or butts as the case may be.
