We are playing the Texans tomorrow, so I thought I would do a brisket:

I guess they don't have that sauce down here. At least I haven't seen it.

Is it mustard and vinegar based?

I got it when I was in Charlotte for Thanksgiving.

No mustard in the original flavor (SC style has mustard)
It has:

Water
Vinegar
Wheat flour
Salt
Soybean oil
Paprika
Garlic
Onion
Xanthan gum
Spices



The brisket just went in @ 1500 EST.

It's coming out @0800 done or not. We leave for the game @0900. Gotta get a good parking spot for tailgating. (Sorry Canucks)

I pulled the brisket and put it in FTC about 830. Left for the game around 9, got there around 10. Broke the brisket out about 1100. It was perfect.

Looking back at your pictures that's because you didn't have half a bottle dumped onto the outside of it and the other half injected like Nepas does when he does it. It still looked great FLB. You will have to wonder over to the Orange Bowl and cheer on the Hawks for me. The Black and Gold boys know how to tailgate in the snow or on grass.

Pens a very dear friend of mine moved to Pittsburgh because she is such a big steelers fan. No I am a Raider fan and have been for 35 yrs. Anyhow I am referring to the Iowa Haweye Fans. There will be a bunch of them down there.

FBR, That brisket is another work of art! I know it was easier to swallow than the out come of the game.

that looks GREAT! was it on smoke the entire time?  what flavor 'pucks' did you use??
i have an 8 pounder on right now; using mesquite.

Hopefully someone comes to tell you exactly, but you probably only want 4 maybe 5 hrs of smoke or it will be too strong.
