Mixed and stuffed up a 10 lb batch of venison hot dogs yesterday. Just put them into the smoker to dry for an hour and will start the smoke.
6 lbs of venison and 4 lbs of pork ground up.

Looking good. I never made hot dogs myself, bet they are great!
Finished up. 4 hours in the smoker, ice bath and bloomed. Ready to package.

Dang tasty looking. :P Those turned out nice. Great job HawkeyeSmokes. I just finished making some Bou brats a couple of weeks ago and all 15 lbs. are gone. I'd love to try that recipe you just did with some moose this time. Can you spare the recipe or is it a family secret? :D ;)

That recipe can also be found in the book "Great Sausage Recipes and Meat Curing". Used it myself except with beef. They are good. Yours look excellant.

After you mix all ingredients, you can regrind and regrind or use a food processor to get the mix to a consistency similar to baby food. Real mushy, I've done it once on my hotdogs, it's good but not necessary.

I would agree with Roadking about not needing to emulsify the meat.
Ground the meat twice with the smallest plate I have, mixed and stuffed.
