I had two Butts I was gonna do one way and after seeing KaNola's post I decided to
do something similar.

Good Golly I like buying Butts for $.88lb. I shaved all the fat off! Rubbed it with "Bad Byron's Butt Rub" (nice stuff)

Then gave a sloshing of Frenches Honey Mustard and dryed up the wet mustard with more rub.

Started about 3:00 so I could sleep tonite. In the OBS with just a maverick. I used 2 pecan, 1 apple and am smokin for 7 hrs 40 minutes.

I hope you're happy with the results of trimming the fat cap. It worked for us. Produced what I think is a more pronounced bark. I could be 1000% wrong. Will be interested in your opinion of the finished product.

Like you, I look at it as an experiment. It should have enough rub/slather to guard against anything too bad.
I think I will flip them when I rotate them to keep the two sides evenly exposed to the heat up-flow.
I have been wanting to do it, you just pushed me over the edge. ;D

Awesome looking Butts man!!! I feel the need to do some butts again. I was talking to the wife about what I should make for my son's first birthday and I couldn't think of anything better than some pulled pork!!!1 She agreed! Cant wait to see how messy he gets!!! :)

IMO, I couldn't tell the difference in taste between the two.
Didn't miss the fat cap at all.
Bark was excellent.
I'm sure Daughter and SIL will love them.

I just started doing this about 8 to 9 smokes ago.
First I put them in the water bowl with the spent pucks,
but now when I have the bottom shelf open, I put them there.
Does the tea do anything special, Does apple juice?
I like the smell of fresh brewed tea. Everything I have used it on is good eats.
I just use cheap (100 for .99) tea bags, but some spicy, kick butt tea bags might be better.
Try it and it you don't think it helps, then all least it smells good while smoking.
I'm about as ready as I'm gonna get to buy a smoker so it's good info to know. I'll try it for sure.
I'm about 99% sure I will pull the trigger this week on a Bradley smoker. So far the 8-ball is saying, "All signs point to yes" :)
