Trimmed Butts .... 1st Honey Mustard 2nd Molasses/Creole Mustard

I took the morning off from my "Everything But The Kitchen Sink" smoke,

Time to go back to work.

I had two Butts I was gonna do one way and after seeing KaNola's post I decided to

do something similar.

Butt #1



Good Golly I like buying Butts for $.88lb. I shaved all the fat off! Rubbed it with "Bad Byron's Butt Rub" (nice stuff)



Then gave a sloshing of Frenches Honey Mustard and dryed up the wet mustard with more rub.



Butt #2



It got the same fat cut and rub.



Nuked and brushed on some Grandma's Molasses.



Brushed on some Zatarain's Creole Mustard



Smothered it with more BBBR



Started about 3:00 so I could sleep tonite. In the OBS with just a maverick. I used 2 pecan, 1 apple and am smokin for 7 hrs 40 minutes.



Got two small pans of water and tea bags. This is about an hr ago.

I hope you're happy with the results of trimming the fat cap.  It worked for us.  Produced what I think is a more pronounced bark.  I could be 1000% wrong.  Will be interested in your opinion of the finished product.

10:00  and all is well. Maverick says 220* (actually 218*)



Gonna rotate the racks after the smoke clears.

Like you, I look at it as an experiment. It should have enough rub/slather to guard against anything too bad.

I think I will flip them when I rotate them to keep the two sides evenly exposed to the heat up-flow.

I have been wanting to do it, you just pushed me over the edge. ;D

This is cheap fun.

I'm not monitoring the meat yet, just the cabinet temp.

Awesome looking Butts man!!!  I feel the need to do some butts again.  I was talking to the wife about what I should make for my son's first birthday and I couldn't think of anything better than some pulled pork!!!1  She agreed!  Cant wait to see how messy he gets!!!  :)
Is it bad if my wife refers to the smoker as "The Mistress"?
