Title: Summer Chubs

Decided not to do the summer sausage sticks. Went with 10 pounds of chubs instead.


This is 5 of the 10 lbs.

My stuffer plunger goes way down and this is what i have at the bottom of my stuffer. There is more mix in the 1" tube that i push out into the casing.

Nepas you better go check the neighbor's because you are missing the 2 mahogany chubs that were hung on each side.    ;D  They are lookin good!

Never mind!  I see in another post that you moved them to the MAK.  Glad they did not sprout legs and walk off LOL

Been blooming now for 3 hours. Got just a tad wrinkle in the casings but no biggie. 3 day rest in the fridge now.

Those are 1 1/2" x 12" clear LEM fibrous.

sNc summer looked so good i had to cut one of mine open to see how they came out  ;D

I added 2 T of course black pepper and red pepper flakes to my mix to kick it up some

Looks great NePa!  I added a little more pepper to mine as well, but next time I
think I'll add more and some red pepper flakes as well.
