Decided to do a Chicken on a Throne from Smoke & Spice.
Started with a yardbird

Rounded up the ingredients and mixed up some Wild Willy's.
Gathered up the ingredients for the injection liquid.
Mixed it all up.
Injected and rubbed the bird.

Tomorrow, this will go under the bird -

and some Alabama Great White will be served on the side.

That will be some tasty vittles there.
Looks like you beat the tar out that bird, and he's all bruised up stuffed in a bag. Having flashbacks to your Javalina huntfollow?

Why do you think I called him thronebird - after rambo the thornbirds. :D

Lucky they didn't sell you a chciken with a Head on it or you would try to mount that too. ;D
Your cook sounds delicious.
Looking forward to the results.

Gotta tell you, that wording played out a whole different way in my head. ;D Looking to start around 11:00 and expect to be done around 3:00.

Alabama Great White?
It's a sauce to be served on the side. I'm only making it to try it, I might not need it with all the other stuff on the bird.

Alabama Great White?
Must be something like Big Bob Gibson's White sauce?

;D ROTFLMAO ;D .............. Get Pics! We love pics!
Is that Sauce like Bob Gibson's?
Yep, should be the same stuff - or at least pretty darn close.
I mixed up the throne juice and decided to put some in the bowl too. I started preheating the smoker. WOW! I never expected for that juice to be so pronounced while I was preheating.

I guess some relatives decided to come over and attack me. They must of thought I was Col. Sanders and I took their Great Aunt Penelope.

Those quail babies are a riot to watch. They're like tiny little roadrunners zooming all over the place.
Started on the Alabama Great White, and mixed it all up.

Finally got the bird in the smoker.
Got just a wee bit of Cherry smoke rolling with the bird.

Getting close, IT is at 165, tossed in some corn on the cob.
Alas, the meal is ready.
A little salad just to say I ate some greens.
Saturns for desert. (Apple slices with strawberry centers topped with cinnamon)
The full meal, corn on the cob, potato salad, wine, salad, chicken, and saturns.

And finally the money shot.

I got to tell you, this is really good. It makes chicken bearable. I'll probably stay away from the Great White, cause it kinda dulls the heat a little (not that there's that much to dull). Sure is a heck of a lot of work for a yard bird though.
Looks bueno!
And you are right, you worked hard for that chicken.
Looks great, Kev...
THANK GOD it wasn't anything like the picture in my mind!
;D :D
