Decided to do a Chicken on a Throne from Smoke & Spice.

Started with a yardbird


Rounded up the ingredients and mixed up some Wild Willy's.


Gathered up the ingredients for the injection liquid.


Mixed it all up.


Injected and rubbed the bird.


Tomorrow, this will go under the bird -


and some Alabama Great White will be served on the side.

It's a sauce to be served on the side. I'm only making it to try it, I might not need it with all the other stuff on the bird.

Yep, should be the same stuff - or at least pretty darn close.

I mixed up the throne juice and decided to put some in the bowl too. I started preheating the smoker. WOW! I never expected for that juice to be so pronounced while I was preheating.


I guess some relatives decided to come over and attack me. They must of thought I was Col. Sanders and I took their Great Aunt Penelope.


Those quail babies are a riot to watch. They're like tiny little roadrunners zooming all over the place.

Got just a wee bit of Cherry smoke rolling with the bird.

Getting close, IT is at 165, tossed in some corn on the cob.
