Smoking 4 half chickens and 2 racks of STL cuts...

From left to right - the chickens are 1) simple Kosher salt and pepper, 2) Everglades Heat (from FLBR), 3) Grub Rub (from DTAggie), 4) Mojo marinated (from FLBR)

The ribs are Grub Rub (on top) and the other is just Kosher salt and pepper

It's all rolling with hickory @250°

Using "Rancher" hardwood briquettes with chunks of hickory in the pan.  Rancher isn't available around here, but I contacted the company and they re-brand it (exact same stuff) for Trader Joe's, so I picked up a bunch last time me & STC were down in St Louis.  Getting low -- gotta make another ROAD TRIP soon.

Well, that load pretty much fills up one rack in the Stumps.  What are you doing on the other 40 something racks in there? :D

Just been using Cowboy, nothing else in this town and I forget when I go to Houston.

It was VERY good!  Thanks!

Everything came out great, but I was "home alone"...  Ate till I dang near busted and fell over.

The only "experiment" that didn't work so well was my "plain salt & pepper" (chicken AND ribs).
Whoooooops...  Made the mistake of using "Restaurant Grind" pepper (instead of the regular dusty stuff).
It was over the top PEPPERY.

But, the Grub Rub was delicious!
Still have some chicken -- gonna re-heat on the grill with some the Carolina sauce (as soon as I get hungry again)....
