Title: Quiet weekend- just ribs

So this weekend I 'll meet TestRocket and give him the starter that Sonny sent. It grew well. (thanks Sonny)

Then I'll put the ribs on. Bought a bunch of coutry style ribs a few weeks ago. Don't remember which type they were but they were on sale. Slathered with some CT, a bit of Renown Mr Brown rub, wrapped and in the fridge waiting for tomorrow.

We get country style ribs on sale here often, but havn't had much luck in cooking them in smoker.  They turn out dry every time.  I have used the 3-2-1 method and have tried just rubbing and smoking, finishing on the grill and still dry.  Not sure what I am doing wrong, but I just can't seem to get these right.

Someone will come along with a more correct answer but it is basically a pork butt? or shoulder cut in pieces that resemble rib shape. Can either have bone-in or bonless>

Ribs rubbed and ready to start. Put in with 4 hours of pecan (had a lot of it and never used it so I figure that this was as good as any time.)

Changed and smoked for a total of 3 hrs. During that time after 2 hrs I spritzed with apple juice; after 1 more hr I spritzed again and wrapped in foil. Cooked foiled for 1 hour then took out of foil and mopped with BBQ sauce. Cooked for 1 hr (40 min more with pecan smoke).
Served with corn on the cob, and BBQ sauce on the side. The country ribs were very tender and everyone loved them.
Sorry no pics - the feeding frenzy began and I had to jump in before it was all gone. ;D
