My daughter will be setting up a booth again this weekend at the Auburn/Kentucky.

I purchased 5pkgs - 10 butts total at Sam's at $1.58 pound.

I purchased a Dual PID for my Bradley...

I placed the second probe under the bottom rack of pork.

About 4 hours in I got concerned with the temp's

reading 226f on the PID...

The door was reading around 175f

Hey Gus, I believe what they do is get a temporary food service permit, this allows her to set a pop-up tent for 3 days at a certain location. I know that's how she does it here in our area.

She has to fill out a request and pay sometime like 25 or 35 dollars and then they send someone over to check it out. She has done this down in Lexington 4 times so far and they only came out the first time. They do have requirements that must be met but nothing big.

Got Back around 5:45pm and checked on the two in the Bradley. It had moved from 163f to 171f in about a 4 hour period.

They do look damn good but I'm starting to worry about them.

The bottom butt is 170f and the top 171f.

Now at 8:30 the top butt is setting at 173f and the bottom at 171f.

I'm confused!!

It' 11;25 and its been about 27 hours and my IT on the top butt is 178f and on the bottom 181f. Not sure this well even be done by tomorrow morning!!

Why wouldn't they be good? They have been out of the danger zone. Just getting tender, subborn but tender.

I'm not going to throw them away. I did crank up the heat back around 6pm up to 235f but I'll go back out and crank it to 250f.

Well after 30 hours the first butt reached 195 and was FTC and put to sleep.

The other stubborn butt was ready shorty after that around 31+ hours.

I'm going to start with the last first since it went into the cooler last and was on top.

I don't have a complete total thus far but she did say that they sold all but about 3 pounds of pork - so she gave it away.

I need to do more of the pulled chicken the next time. Gone!

She ran out of Dog's and Brats.

I'll update you later on the rest and the total of sales. She is on her way here to visit.

Yes, it is...   Maybe that's why it took forever and a day to cook?  Not as much fat to break down on the insides?

After pulling and tossing the fat and bones I vac sealed 11.63 pounds.

Started with 20.67 and finished with 11.63 pounds.

My daughter said that they did a little over 100 pulled pork sammie's,

Sold out on the pulled chicken (I only did around 5 pounds)

Chicken legs & thighs (I did 3 dozen legs) she said that they sold about a dozen and she was giving them away at the end.

Smoked Bologna - Sold none!

Smokin' Dogs (I did 3dz) Gone

Smokin' Brats (I did 3dz) Gone

Soda's / Pops (I purchased 10 cases - 240 cans) She said they still have a case or two.

I took 4 cases of Potato Chips - 50/1 oz. bags

She said that they did a little of 1,150.00 in sales (that was a pretty awesome evening)

My receipt from Sam's showed 497.61 w/taxes ---- plus I wasn't able to get this stubborn butts down to her.

I did purchase misc items to serve the food with...

What did I learn with this Smoke...

Next time I'll only do Pulled Pork, Dogs and Brats. I'll forget the chicken all together, she said that people stood in line to long waiting for someone to decide.

What do you think about changing the menu??

Something you might want to consider that would be fairly easy

is them Turkey Boulders that STC does.

She would grab them people that would pass her up because they

like to eat healty.

It might be hit or miss, but you could try smoked turkey legs..   Those are a big hit with the 'fair' crowd.

Yep Dump the yardbird. Use the KISS principle. Less is more they say. Less options, less guess work, less waiting, less hassle. Then she can turn and burn the customers faster threw the line.

Nice smoking, Dad!  It all looks awesome.

A couple of thoughts ...

Simplify - dump the bologna. have one chicken offering.  Remember this is walk around and eat out of your hand food.

Go with familiar fav's - if she wants to keep chicken, then make it a barbecue chicken sandwich (breast, grilled and sauced), easy to walk and eat.

Price - too cheap; in the restaurant trade revenues should be at least 5X basic materials cost (in this case, the meats).  You can shave the margin on the bev's and the chips, but you should still be getting 5X on the balance.  The pork sandwich should be a buck more, same price on the chix sandwich, brats add 0.50.  As I look at it she's giving away the sides.

Just throwing another idea in the mix, SS...
You could do smoked leg quarters whole - not pulled sandwiches (way less work).  She could just serve em on a sheet of foil (food service sheets). 
They're dirt cheap to buy and they taste great.  Heck, I'd buy one if I was walking by!

Hey Shasta bob, I know the local owner here and back in 2009 in did a few butts for a party that they were having. He had gave me a couple to haul the food, I liked them so much I asked how I could purchase a couple or so and he sold me 8 new ones at $40.00. Now I have a dozen bags.

I might be able to get you a couple if you would like them.
