Title: Chicken Parmesan

Tonight I made some chicken parmesan and it turned out excellent.  I took a whole chicken breast cut it in half.  Then I cut in half again so to make it thin.  I breaded with mies and browned the chicken in EVOO.  (about 2 min per side)  Once all the pieces were browned I placed in a baking dish added some preheated red sauce (In this case I used Barilla Garlic and Mushroom sauce) and topped with mozzarella cheese.  I preheated the oven to 300 then turned it on broil and placed the chicken on the shelf second from the top just long enough to brown the cheese.  I was very happy with the results.  This mies breading really is wonderful. I just might be.... haha  That stuff is great.  I just found some of the House Autry breading the NEPAS uses so I am going to try that next before I order another batch of mies.

Sure looking good Snelly. When you going to try it without oil? just flopping the yardbird on the grill with a sprtiz of water like Ronbeaux?

Man I almost tried it last night, but I chickened out....  Maybe it was because of last weekends disaster.

That looks really good, and I like the way you sliced it again to make it thinner. 
With chicken (or veal) parmesan, I love a high ratio of crusty fried goodness to the meat!

Some people pound it thinner, but i find it easier to slice thin when the chicken is partially frozen.

You now ruined that image for life. Poor Snelly will be seeing you every night. Just trying to figure out if it'll be your head on her body or her head on your body.
