If you are interested in curing food using a variety of means including salted, spiced, dried, smoked, potted or pickled then I would recommend the book below. Not sure if it is available outside the UK?

It has a global flavour from the Mediteranean to Scandinavia, America to Japan and covers a wide variety of food from New York Pastrami to Sashimi, Liverwurst to Venison Jerky!  :)

The pictures that accompany the recipes are superb. The author uses and recommends the Bradley Smoker.

Thanks Manx, looks like it's gonna be another addition to my book shelves.  Hope it's in your English.  After living here for so long an American speaking English sounds rather strange to me  ;D ;D

It is in English English as oppossed to American English if that makes sense!  ;) :D

The one from Amazon.com seems to be a paperback version, and smaller than the hardcover version that Manx referred to.

I found an English English  :D copy on abebooks.com that ships free to the USofA.

Amazon in the US offers both the softcover (~$22)  and the hardcover (~$48) .  Based on page length, I would guess they are different somehow (maybe fewer pics in the softcover ?), and the price difference seems a bit extreme, plus 3-5 weeks delivery on the hardcover.

But, if on the hardcover page you click the 8 new from (http://www.amazon.com/gp/offer-listing/1906417415/ref=dp_olp_new?ie=UTF8&qid=1294226818&sr=1-7&condition=new) ... link you will get a page that shows Amazon's offering along with those from other sellers that storefront on Amazon.  All the HC sellers are UK based.  Ordered mine for ~ $34.07 + 3.99 shipping with 10-14 day delivery from the UK.

My copy came all the way from Gloucestershire, England yesterday.   Very impressed with it so far.  The photographs are amazing.

Yes it is a great book. Already made the cold smoked trout. Didn't want to take the 3 hour train ride to lake Garda so used local rainbow. Delicious.

Danged all of you - curses on you!.  My downfall is falling for cookbooks with purdy pickchurs in them.  Now I HAVE to get it.  I about fainted when I saw that salmon pic STC posted.

Mine arrived from England yesterday as well.  She does use a Bradley Smoker and it is mentioned by name a couple of times.
