OK, If I do not add the brown sugar and syrup, but follow the rest of 10.5's recipe will my bacon still turn out. I have 2 more five pound pieces to cure yet.
I have 2 five pound pieces in the frig right now done with 10.5's Maple Cured Bacon recipe, but was wondering what I could expect for results if I don't add the sweet stuff since my wife doesn't care for sweet flavored bacon.
I would leave out the syrup but keep the brown sugar.
You need some sugar in there or the bacon will be overly salty.

I would tend to agree with OU812, particularly if you are using Morton's TenderQuick as your curing agent. If you're using Cure #1, it would most likely not be as salty as using MTQ and omitting the sugar completely.
I went with the brown sugar and I used Cure #!
So between the two batches, in a little over a week I'll have around 20# of bacon.
20# of delicious smoked bacon!! :)
20 # of BACON, OH YAAAAAAA.
If you need a place to store that I got some extra room in my freezer. ;D
Sounds like a party is happening in your fridge!!
:) :) :) Everything lookin good so far !! Gives me a chance to smoke something other than salmon, over the holidays the entire family was hooked on my salmon and it seems like every week I was making a batch. Before the bacon is ready to smoke, I'll be smoking some of my special meatloaf, always have to make two extra large loafs because the kids and neighbors seem to always know!!
I'll break down and finally post my recipe within the next few days.
Always looking forward to another meatloaf recipe. ;)

I was going to make one with the maple and brown sugar and substitute the maple and brown sugar with black pepper to make some pepper bacon. Belly's will be ready next Wednesday from the butcher for pick up then the party begins!!
OK, I just posted my Meat Loaf Recipe to the Meat section, enjoy :)
;D YES!! ;D
OK, It's been 5 days, and am going for 7, but heres how things started. There are actually 4 pieces total.

what's goin' down at salmon town. That is a lot of salmon.
I did a similar batch of salmon for Christmas, and it disappeared!!, so I had to make some more for my fishing buddies and to have on hand. Got a freezer full, we have some on the grill everyweek, plus smoked for snacks and stuff.
sounds delish. I will have to try it sometime...a smaller batch though it is $$ here $7-$8 lb.
OK, today was the day to do the smoke of my very first bacon, using 10.5's recipe.

Doing another batch tommorrow :)
Looks really good. How did that piece you sliced off taste after you fried it up??
It tasted very good, and I expect after being in the frig overnight it will be even better. ?? The batch I'm doing tommorrow is without the maple syrup, it just had the brown sugar and the remaining ingredients from the recipe. :)
Can't wait to see the results of the one without the maple syrup!
Way to go Schneep! Looks great. You are now officially spoiled when it comes to buying bacon instead of making it yourself.
Looks mighty good for having Maple syrup on it. ;D
Cant wait to see the regular bacon.
The batch made without the maple syrup is in the smoker and the IT is 107, won't be long now!!
OK, here is the batch made with 10.5's recipe. minus the maple syrup. Did not add any extra brown sugar, just what the recipe called for.
Both batches are excellent tasting, but I actually think I like the brown sugar only better, if thats possible?? The wifey said " NO more store bought bacon" and I said OK!! :)
