First bacon

OK, If I do not add the brown sugar and syrup, but follow the rest of 10.5's recipe will my bacon still turn out.  I have 2 more five pound pieces to cure yet.
I have 2 five pound pieces in the frig right now done with 10.5's Maple Cured Bacon recipe, but was wondering what I could expect for results if I don't add the sweet stuff since my wife doesn't care for sweet flavored bacon.

I would leave out the syrup but keep the brown sugar.

You need some sugar in there or the bacon will be overly salty.

I would tend to agree with OU812, particularly if you are using Morton's TenderQuick as your curing agent.  If you're using Cure #1, it would most likely not be as salty as using MTQ and omitting the sugar completely.

I went with the brown sugar and I used Cure #!
So between the two batches, in a little over a week I'll have around 20# of bacon.

 :) :) :)   Everything lookin good so far !!     Gives me a chance to smoke something other than salmon, over the holidays the entire family was hooked on my salmon and it seems like every week I was making a batch.  Before the bacon is ready to smoke, I'll be smoking some of my special meatloaf, always have to make two extra large loafs because the kids and neighbors seem to always know!!
I'll break down and finally post my recipe within the next few days.

I was going to make one with the maple and brown sugar and substitute the maple and brown sugar with black pepper to make some pepper bacon.  Belly's will be ready next Wednesday from the butcher for pick up then the party begins!!
The smoking lamp is lit!!!
