Was talking with 10.5 telling Him about some sausage I was going to make and part of it was making
Summer Sausage in the 3lb logs. He said he had seen (he thinks) OU812 leave some space and twist
the logs to make two separate rolls. So I thought I would try it with the 1lb chubbys.
The meat was 70% Venison and 30% Ground Pork (Boston Butt) with a Lem's Summer Sausage Kit.

I take it you didnt get a deer again this season. ;D
Good thing you got all that in the freezer.
Sonny
You just have to keep making good sausage and do it on shares for your deer hunting friends. I used to do that and I had more meat then I knew what to do with.

I never took my gun out of my truck this year at the Deer lease and ended up with 4 deer.
They run thru my back yard! ;D
Those are actually the perfect size! A one set meal with a sleeve of crackers.
Speaking of guns. I sprung for a Marlin 44 mag today that I plan to blow a hole big enough to throw a cat through in a hawg at the end of the month!

Well I don't like you very much. ;D
Sausage looks good. I had to do something similar yesterday when I made New Jersey Pork Roll (Taylor Ham). It kind of scares me that we both can think alike. :)
