Awhile back Hal4UK sent me a bottle of Starnes Sauce via STC.

I have enjoyed it on Pulled Pork sammies. Great Stuff!

I used Greg's Fire-N-Ice BBQ Sticks and modified it to

fit for the Starnes Sticks.

5 pounds  80% ground butt 20% ground beef.
1 tsp. Pink Instacure
3 Tbls. salt
2 tsp. black pepper
3 tsp red pepper, I use a short trip in a grinder
1-1/2 tsp. garlic salt
2 tsp. sugar
2 tsp. cayenne pepper (add more for xtra heat)
1 tsp. smoked papkria (unsmoked is fine as well)
1/4 cup water (mix with cure)
3/4 cup Starnes Sauce

I mixed up the pork and beef and spices and cure. Then I added the Starnes.

I using the big smoker but decided to rack them ala OU812. No strings.

Since they are Starnes Stick I'm using Hickory for Smoke. I started the smoke at

1 in the morning so I won't to baby sit these things.

We'll see if we have "Good Eats" in the morning. ;D

The heat level sounds just right to me.

Started at 1:00 A.M.?

I'll check back around 10:00 they should be close by then.

When they came off the smoker they had a very tangy bite.

A lasting warmth. ;D Now that they have been fridged for a while

the "Bite" has mellowed out. Next batch I will use just enough water

to dissolve the cure and the rest liquids will be Starnes and maybe adjust

the red pepper and cayene down so that the Starnes doesn't compete with them.

Also I will probably up the ratio of beef to pork to 50/50. (Less pork, more Beef)

I mixed, stuffed, and racked 5 lbs of sticks in around 30 minutes

by racking them and not playing around withtieing knots. I like that!

Next time I'll make the sticks the length or width of my big smokers racks.

That will be easy peasy and faster. And rack rotations will be simple also.

We can do that!

The vinegar in the Starnes did change the texture of the meat some.

Gonna see what happens after a day of fridge rest.

You got a stash for CRG?  If not, I live at the source you know.  Shipping some out to NE and TX this weekend. I can easily replenish CRG.

Gonna see if they will sell me a case to bring to Krewe du Smoke.

Make sure you dont seal them up tight when you do, they need some air.

Use a container with a loose fitting lid.

Or ifin your using a ziplock bag dont zip it shut, leave about an inch of it open.

The flavors are better 24 hr later, give em time to get acquainted.  ;D

Those look great. Do they come with a supply of asbestos toilet paper. I would put money they are going to burn at both ends.

Typically it's an "add-on" to a pulled pork sandwich, just sprinkled on top.  However there's nothing typical about this bunch! :D

I've never had too much no matter how much I use.

Try it and then CLONE it.
