Title: Goose Grindage
Post by: NePaSmoKer on February 01, 2011, 06:10:40 AM
I think i'm growing feathers  :D

Trimmed some goose breast and ground it thru med plate. Thats 9lbs being ground.

Next grind is 6 lbs of poke butt  ;D
(http://i868.photobucket.com/albums/ab242/nepas1/DSC00352.jpg)

Mi Poke..........................................................................Mi Goose
(http://i868.photobucket.com/albums/ab242/nepas1/DSC00354.jpg)

Mix the Goose-N-Poke together good.

I dont have any cure or seasoning with the mix yet.

Put the meat mix in a bowl and cover with clear wrap for a few hours until i decide how i'm going to do this.

Heck, if you're going to cut a hole in it, slip a pellet pooper in there! ;) :)  Seems I recall you having an extra Traeger burner laying around somewhere.

Ditto!

Just run it on Smoke P4 and let the electric element pick up the slack.

I sure like the looks of that smoker. Before you make the cut in that new cabinet let me get the smoke generator to you I will send it with the rest of the stuff. It might be what you can use to get some serious smoke on something like this. This thing isn't all automatic but if you want a lot of smoke for a while it will do the job.

Good looking SS Rick. Did making SS with the GP alter the flavor of the GP at all?

Wasn't Goose Grindage a WWE Superstar? :D
