Mix the Goose-N-Poke together good.

I dont have any cure or seasoning with the mix yet.

Put the meat mix in a bowl and cover with clear wrap for a few hours until i decide how i'm going to do this.

Looking good Rick....bet them geese are thinkin' "in our condition do we really look like we need more gun powder?"

Can't wait for some updates on your progress.

NePaSmoKer

The chubs be a-smokin now

I really didnt want to cut a 5" hole in the side for a smoke gen, but i think i might still.

TestRocket

That's a heck of adjustability with your shelves in that smoker Rick!  ;D

Heck, if you're going to cut a hole in it, slip a pellet pooper in there! ;) :)  Seems I recall you having an extra Traeger burner laying around somewhere.

Ditto!

Just run it on Smoke P4 and let the electric element pick up the slack.

I sure like the looks of that smoker. Before you make the cut in that new cabinet let me get the smoke generator to you I will send it with the rest of the stuff. It might be what you can use to get some serious smoke on something like this. This thing isn't all automatic but if you want a lot of smoke for a while it will do the job.
