It was from Costco and labeled "Lean Stew Meat". Looked like eye round to me if I had to guess. I think it was FLBent that got me hooked on the nuggets 8)

I just found a Restaurant Depot near me and nearly dropped dead in awe after walking in.
Looks Great!! How long do you put in the dehydrator?? Certain temp or feel??
I dehydrated at 140 for about 8-10 hours. I usually can tell when whole muscle meat is done by the shiny glazing that appears and the color turns darker. It's almost like a pelicle forms when its done. Of course the old grab and bend is the best method, but with chunks that may not work.
I go by a chew-taste test on the nuggets, but 8-10 hours @ 145-150 is the right range for my chunks.
Cutting them into consistent size can be a challenge.
Just made a batch of whole muscle deer jerky using the Chipotle and the Original Jerky Juice from Cabela's. Just follwed instructions and used the dehydrator for 6 hours and came out perfect, moist, tender and alot of flavor. To bad no one has come up with a duplicate home made recipe on the juice yet, I liked the original the best, lots of smoke flavor.
I want a Costco..., I want a Costco..., I want a Costco. There, now that my tantrum is done maybe I'll head down to Sam's Club and get a couple of whole sirloins.
Chunking those is an interesting exercise when you have two Golden Retrievers in the house. You wanna talk about a couple of very attentive friends ;D
