All the same size, the one on the right i just didnt pull the draw tight like the others. Hanging at 100* for an hour no smoke. Then 130 with apple smoke.

Thats like an air check sleeve. Takes the trapped air from the casing while stuffing. Kirby chime in here ;D

That is a new invention Shhhh. It allows trapped air to escape under the casing. No more pricking the sausage to get air out. This can be moved from stuffer tube to tube. electrical tape is cheap. How did it work Rick??
Worked real good. I have some gummed butcher tape i am going to try it with to tape to the tubes.

Okay, fess up... you own a deli somewhere or you are running some kind of underground sausage syndicate. I don't know what makes this bologna Dutch, but it looks fantastic, like everything else you push through a stuffer.

Nice looking bologna, it has tookin on a nice color.
Giving em a 2 hour bloom time, then fridge for a couple days, cut the rings off and vac seal.

Cut the string and rings off so they dont put a hole in the vac bag.

That batch wont be ready till April fools day. :D
I did find some swiss when staching the new batch though.
