Ya better get some snow chains for the rig casper :D
So i went with some 19mm collagen casings on these.
Stuffed loose so they dont bust under the weight.
Loaded the tray up.
More freezer paper on top of em.
The other tray on top.
And some weight on this batch.
And kept stuffing. Took my LJ press top, paper down.
More paper on top and ready for the rest.
Now into the garage fridge.
Wont be able to smoke these until friday morning.
Looking awesome as usual Rick.
I'm gonna have to try to make some of this.
Now if I only could get a tried and true recipe.
Hint, hint. ;D
Got home late so i took the LJ from the press.
Hanging and have to rack a few. Overnight in the smoker, no heat or smoke. Will roll smoke in the morning.

Early morning smoke rolling now.
Hanging to cool.
Hanging for a week with humidity.
Doh That is worse than having to wait for smoked cheese. Because it is just hanging around tauntingly. At leats the cheese is stuffed in the back of the fridge. ;D
Decided to pull and vac seal early....well really it was the Mrs idea :-\

Oh yeah.
I think these will turn out way better when i get my cure cabinet done. This way i have controlled temps and humidity.
They look awesome Rick!

Thanks Mike
Whole nuther ballgame the cure #2 stuff is.
They look great Rick. How close do they taste to the cure number 2 version. I would like to try them but I don't have a humidity control cabinet and to be honest I don't think I would ever find time to make one.
Kirby
This batch also has the cure #2 in it. I think this batch turned out better than the 1st one. The smaller casings are better and more uniform. Its nice to have a shelf stable product that does not need refridgeration.
My LJ snack jar.
