I gotta bring some to NOLA. So i'm doing 5 more lbs.

Cure #2 again with some water.

The mom N pop store i go to i can get salt packed hog casings for $7.30. Enough here to do 50 lbs.

So i went with some 19mm collagen casings on these.

Stuffed loose so they dont bust under the weight.

Hanging and have to rack a few. Overnight in the smoker, no heat or smoke. Will roll smoke in the morning.

Doh That is worse than having to wait for smoked cheese. Because it is just hanging around tauntingly. At leats the cheese is stuffed in the back of the fridge.  ;D

Oh yeah.

I think these will turn out way better when i get my cure cabinet done. This way i have controlled temps and humidity.

They look great Rick. How close do they taste to the cure number 2 version. I would like to try them but I don't have a humidity control cabinet and to be honest I don't think I would ever find time to make one.

This batch also has the cure #2 in it. I think this batch turned out better than the 1st one. The smaller casings are better and more uniform. Its nice to have a shelf stable product that does not need refridgeration.

Those look to close to perfect Rick, Those Jaegar presses work awesome!!! I'm thinkin of making some out of poly cutting boards and Stainless screws, then huckem in the Dishwasher when done ;D

They sure look good Rick. I like the size. What IT did you take them to in the smoker.

Took them to 160 with heavy smoke. Then hung with 70%RH
