I gotta bring some to NOLA. So i'm doing 5 more lbs.

Cure #2 again with some water.



Got my beef and poke.



Mix ready



The mom N pop store i go to i can get salt packed hog casings for $7.30. Enough here to do 50 lbs.


But on this batch i'm going another way  ;D

So i went with some 19mm collagen casings on these.

Stuffed loose so they dont bust under the weight.


Loaded the tray up.



More freezer paper on top of em.



The other tray on top.


And some weight on this batch.



And kept stuffing. Took my LJ press top, paper down.



More paper on top and ready for the rest.



Now into the garage fridge.


Wont be able to smoke these until friday morning.

Got home late so i took the LJ from the press.




Hanging and have to rack a few. Overnight in the smoker, no heat or smoke. Will roll smoke in the morning.
