Title: AMISH MUSTARD EGGS

Boil and Peel 12 eggs and put into a heat proof container.


4 Tablespoons yellow mustard
2/3 cup of sugar
1/2 teaspoon salt
3/4 cup white vinegar
3/4 cup water
2 drops of yellow food coloring

Mix all ingrediants in saucepan and bring to a boil, stirring almost constantly.

Pour sauce over eggs.

Let cool.

Put container in Fridge for 72 hours to let eggs absorb the sauce.

2nd recipe
4 Tablespoons yellow mustard
2/3 cup of brown sugar
1/2 teaspoon salt
3/4 cup white vinegar
3/4 cup water
1 tbs minced garlic
2 drops of yellow food coloring

You can also try a vacuum sealer and put all the eggs and mixture in a bag and suck most of the air out and seal it. It will be interesting to see if it helps to draw more of the liquid into the eggs.

Yes Sir... and we also make pickled red beet eggs too...most of my family is amish... :D

That's my question with the vinegar, how much do they end up tasting pickled??

This recipe looks kind of good. I like mustard and pickled things.
I wounder about using horseradish mustard. I have been using that lately and it is just great.

My wife makes a good hot pickled eggs. The vingegar pickles them. But I dont believe it has mustard or sugar. She use to make all the pickled beet eggs and hot Pickled eggs for Giant Eagle an a few other places. Could post recipes if interested.

Ok here goes.
          Pickled Eggs.
Get a wide large mouth Jar

Into it goes  your peeled boiled eggs till about 3/4 full
                   Boil  3 cups sugar
                           4 cups vinegar till sugar is desolved and boiling
            then pour into jar 4 pints of beets plus juice
            Then add Sugar vinegar mix over beets and eggs.
             Then refridgerate as long as you can wait. They say a week but I can't usually wait that long and start eating after a day or two.


Same Large mouth jar.

              Spiced eggs

Cook and peel 2 doz, eggs put in jar
Take 1 cup vinegar
         1 cup of water
          3 TBS of sugar
         1 TBS of salt bring this to a boil.
  Add 1 jar hot yellow banana peppers over eggs than add vinegar mix. Let set 1-2 weeks if your able.

        If you like it hotter you can add other peppers to taste.
