HAPPY EASTER EVERYONE

I wanted to do one of these for a while
this is the marinade that I used

# 1/2 cup olive oil      # 1 garlic clove, minced
# 1/3 cup white vinegar # 2 teaspoon Italian seasoning
# 1 teaspoons salt     # 1 teaspoon pepper

I let rest over night and then retied it and then in to the smoker at 230 degrees with hickory smoke looking for IT of 150 to 155

You have a great start, and it looks good.  I did one for Easter last year and it was great, enjoyed by all.  Looking forward to your finish pic's.  Happy Easter

The leg is holding at 145 now almost there
for the sides i have a cold cucumber salad and roasted potatoes w/ corn i will post the pics

I would call this a success i have only lamb a few times in my life that wasn't in a gyro there was so much flavor   ;D ;D ;D ;D

I went to a IT of 155 I let it rest 10 min which felt like a lifetime due to the high cost of lamb i will make this a Easter tradition i hope everyone enjoyed it as much as me
any thoughts for lamb leftovers

Lamb leftovers:

Lamb sandwiches are excellent, cold is OK, wram maybe a little better if you can put them together at the last minute.

Heat lam slices in the microwave (do not overdo it, I recommend drizzling a little water on to keep it from drying out).

I also love lamb curry, but with my family there is rarely enough left for it, I used to do this when I was single.

I went with cold sandwiches the were great now i am looking forward till next Easter
