Title: Will seasoned ribs make it an extra day?
Post by: HookedOnMyBradley on August 05, 2011, 06:55:25 PM
I have 4 seasoned and wrapped racks of ribs sitting in the fridge waiting on what I hoped was a good smoking tomorrow but the company I had coming over tomorrow is asking if I can postpone one day.  Would it be a good idea to leave the seasoned ribs in the fridge for an additonal day or should I smoke em up tomorrow?  I am leary myself but thought I would ask for some other opinions.  Thanks in advance.

I have done this with no problems as long as I don't push the "sell by" date.

I guess I should have added that they have already been rubbed.  I know the longer they sit, the more the seasonings make their way into the meat (drool!), but is that extra day with rub on a good or a bad thing?

You should be all right Greg to hold them an extra day in the fridge.

I'd go ahead and cook 'em, eat 'em myself, and tell the company they missed a really great meal.  That'll teach 'em.

If any of you are interested, the rubbed ribs made it an extra day just fine double saran and tinfoil wrapped in the fridge and the amount of flavor that the ribs absorbed was phenomenal!  Hit em with like 4 hours of hickory and they turned out scrumptous!  Thanks again for all the help.

Sorry for the lack of pics!  I was unaware that proof was required.  It's a little blurry but I hope it'll do!  Still enjoying these scrumptious morsels.
