Remember, cook to temp and not by time. Don't sweat the temp swings. I would say IMHO, a dual probe thermometer like the Maverick et732 is a must have.

The chicken came out just great. cooked it to 270IT and then put it on the hot grill for just a couple of minutes. Next is some ranch beef I got last week. Thank you all for the warm welcome.
