Been awhile now and i feel like a noob  :o

Braekin back in with some smoked kielbasa.

For 5 lbs. No time for makin my own mix so going with AC Legg smoked kielbasa mix.

We kinda out by ourselves. Empty lots across the street and on both sides. Lots of military family here so some work weird hours or on deployments.

Anyways

I got the kielbasa in the stuffer and going to use the cellulose casings.

My 6 rack placement is still a work in progress area, I have to do some wall wiring for plugs.

6 pucks of hickory with the PID going from 130 to 170*

Naaa, not yet. I think 1 smoke is going to be ok w/out vent. Its breezy here and got the door open.

Had large amounts of honey-do's this weekend

Glad to see your feeling better and getting back in the swing of things. Snausages look really good. I found a package of kielbasa you left here after the SO. They became the cooks tasters while cooking 250 hotdogs for the end of year Soccer picnic.
