Title: Quick advice on Rack of Pork
Post by: Scotty Dog on October 29, 2011, 03:10:17 PM
Today, I smoked my rack of Pork for 3.5 hours and cooked for 4.5 hours total.  I pulled the rack with IT of 147 and wrapped with foil and towel.  Will let it rest for one hour while the rest of dinner is cooking.  Should I place it in the Big Easy for 1 hour to crisp or until IT is 160 + and then slice it or do I slice it and grill prior to serving?  It has Jan's Rub on it.

If you wanted to cut up before grilling you should have bought pork chops  ;D ;D
I would leave it as a roast and crisp it on TBE prior to serving.

Ditto. You got any pics of it after the TBE?
