Title: OK, I'm doin' Leb-nun Bologna too

Decided to do Lebanon Bologna too using recipe found elsewhere on the internet, I can send link via PM if interested

Dry Ingredients                         Cheated and used 10 lbs of 91-19 Ground beef

Quick spin in the mixer a la Kirby                   All the little chubs lined up in a row

Dried and ready for smoke                               This is about 3 hours in

Recipe calls for 10-12 hours of heavy smoke, don't think I'll give it that much, going on 6+ hours now

After almost 8 hours of smoke and a few more to bring up to temp, getting a little hang time before Caspers taste test in the morning

Those are looking good. Did you grind it a couple of times or are you going for a more coarse texture. I am interested in the recipe if you are sharing.

Yes Thread says 50 lb recipe, but recipe is for 25 lbs which I scaled down to 10lbs

That is very nice Tony. I would ask your taste tester but I don't think he can type. So how did it taste?? I always like when someone says if it was good or taste like crap. It sure looks good.
